Whitetail Backstrap Wood Fire Fajitas
This one's pretty simple, but man, it makes a statement. All you need is seasoned backstrap, corn tortillas, charred and blistered tomato, bell peppers and jalapeños, charred red onion, and parsley or cilantro, grilled scallions and lime for toppers.
Simply cook your loin over a wood fire to desired temperature (I always go mid-rare), slice, char your tortillas, and throw in the rest. I also like to add a little chipotle in adobo on top. And there you have it - wood fire fajitas.
